» 1 cup of garlic cloves, peeled » 1 cup extra virgin olive oil Put the garlic cloves and olive oil in a small saucepan, adding more oil if necessary to cover the cloves. Bring to a slow simmer and cook over medium-low heat until the garlic is tender, about 20 minutes. You may serve immediately, alongside fish or scallops, or store for future use. To store, allow mixture to cool and transfer to a jar, topping with more oil if necessary. Refrigerate. Winter solstice healing tea Honey-lemon tea is my tried-and-true cure for winter sniffles, but if you need something a little more powerful, try this. » 1 tbsp fresh ginger, chopped » 2 cloves fresh garlic, chopped » 1/2 hot chili » Juice of one lemon » 1-2 tbsp raw honey » 2 cups water Simmer ginger for 10 minutes, take off the heat and add the chili and garlic. Cover and let sit for 10 minutes. Add honey and lemon. Sip throughout the day.
