polenta, or scrambled eggs and top with Parmesan, Fontina, or Romano cheese. simple steamed Lambs quarters » 1 large bunch lambs quarters, leaves stripped from stems » about 1/2 cup water » hot sauce to taste » several tablespoons red wine or cider vinegar » salt and fresh ground black pepper Wash the lambs quarters. (The leaves are downy and repel water, but you can still rinse any dirt off easily.) Strip the leaves from the stems. You can keep the whole tender tips, stem and all. Heat the water in a big pot over medium heat. Add the lambs quarters, cover and cook until tender—about 10 minutes. Add the vinegar and hot sauce to taste, along with the salt and pepper. Cover and let cook for a minute or two more. Lamb’s quarter quiche » 1-9” unbaked pie crust » 1/2 t salt » 4 c lambs quarter leaves -cut up » 3 eggs » 1-3/4 c milk » 1/4 c chopped green onion » 2 c grated cheese (8 oz) » 2 T butter » 1 T flour Partially bake pie crust at 450 degrees F. for 5-7 minutes or until light brown. Reduce heat to 325 degrees F. Cook onion and lambs quarters until tender. Stir in flour and salt. Beat together eggs and milk; add vegetables. Sprinkle cheese in pie shell; pour in eggs. Bake 40-45 minutes or until knife comes out clean. Let stand 10 minutes before serving.
